Using only fresh chicken slaughtered that morning, the chicken mizutaki is cooked in a soup that is boiled until it becomes cloudy. This dish is difficult to store and is only available by reservation. The previous owner was so impressed by the chicken mizutaki he had in Kyoto that he wondered if it could be served in Fukuyama, and after much trial and error, he developed it. The simple nature of the mizutaki puts the chef's skill to the test, and it pairs perfectly with our homemade ponzu sauce. Please also enjoy the rice porridge, packed with the flavor of the ingredients.
